Olive Oil Academy, in collaboration with ALMA – The International School of Italian Cuisine, is presenting a series of courses for the olive industry.

Professional Olive Oil Sommelier: a top-level qualification course designed for those who wish to become true experts in the selection and multiple uses of olive oil.  The course aims to train highly qualified professional olive oil sommeliers to make the best use of EVOO, employing their skills and knowledge through effective communication together with innovative techniques of preparation and presentation in oil and food pairings, with particular attention to health and nutrition.  This course is conducted in English and will be held at ALMA in Colorno (Parma), Italy from 4-8 February 2013.

Tasting Panel Supervisor (Panel Leader): An official training course to acquire competencies and skills in the selection and training of professional tasters in order to establish and lead a tasting panel for olive oil quality control, classification and certification. Topics include organisation and direction of panel members, and management of large volumes of samples. This course will be held at the DOMUS la Quercia in Viterbo, Italy in January 2013.

Master of the mill: an additional training and specialisation course for olive oil processors is also available during this period.
