Last month’s interactive webinar with South African table olive expert Linda Costa was a huge success, attended by a large cohort of participants both new to table olive production and with substantial experience.

The event provided the opportunity to gain guidance and answers on issues with current ferments, and saw valuable discussion on processes and equipment, both with Costa and among producers themselves.

The next in the webinar series is a ‘must attend’ for those ready to take their table olive production further, with Peter Reaich from the Australian Olive Company demonstrating the workings of a commercial scale table olive operation.

The Australian Olive Company uses a natural fermenting method for their table olive production and Peter will share invaluable tried and tested tips for ensuring a quality product. Attendees will be shown the washing and sorting processes and Peter will explain the company’s brining and natural anaerobic fermentation process.

There will also be ample time for Q&A with Peter and group discussion.
